Walnuts in Vinegar

  1. Prick the green walnuts several times with a darning needle, place in cold water for 24 hours, then boil with fresh water and place on a sieve to drain.
  2. Bring good wine vinegar to a boil with whole pepper, cloves, and lemon peel, let it cool, and pour through a sieve over the walnuts.
  3. On the second day, boil the vinegar and pour hot over the walnuts; on the third day, let the vinegar boil briefly, add the walnuts and bring to a boil, fill hot into jars, and seal them after cooling.
  4. The walnuts make a piquant accompaniment to boiled meat and roasts.
