Gooseberries in Sugar

Ingredients
- 1 kg ripe, thin-skinned gooseberries
- 1 kg sugar
- 0.25 l white wine
Instructions
- Wash the gooseberries clean, let them dry, and remove the stems and calyxes.
- Soften the sugar with a quarter liter of white wine, skim well, and cook into a thin syrup.
- Slowly cook the berries until soft in the syrup, fill both into a jar, and let stand for 4-5 days covered with paper.
- Pour off the juice, reduce it to a thick syrup, and pour it hot over the gooseberries.
- Treat and store the jars as usual.
