Gooseberries in Sugar

  1. Wash the gooseberries clean, let them dry, and remove the stems and calyxes.
  2. Soften the sugar with a quarter liter of white wine, skim well, and cook into a thin syrup.
  3. Slowly cook the berries until soft in the syrup, fill both into a jar, and let stand for 4-5 days covered with paper.
  4. Pour off the juice, reduce it to a thick syrup, and pour it hot over the gooseberries.
  5. Treat and store the jars as usual.
