Preserving and Drying Various Fruits
Red Beets
6 servings
Ingredients
- red beets (as needed)
- horseradish, diced (a little)
- caraway seeds (a little)
- cloves (a little)
- vinegar, boiled with salt (as needed)
Instructions
- Wash the red beets clean without trimming them, so they don't lose any juice, and boil them in water until soft.
- Let them cool slightly, peel off the skin, let them cool completely, and slice them.
- Place them in a stoneware pot, scattering diced horseradish, caraway seeds, and cloves between the layers, and pour enough vinegar, boiled with a little salt and then cooled, over them to cover.
Modernized from a treasured 19th-century German cookbook.
