Preserving and Drying Various Fruits
Red Pears in Sugar
6 servings
Ingredients
- 1 l lingonberry juice
- 750 g sweet, juicy, tender pears
- 250 g sugar
- 8 g cinnamon, cut into pieces
Instructions
- Sort and wash ripe lingonberries, drain them on a sieve, quickly cook them until soft, and place them in a sterilized, pointed bag made of loose linen so that the juice flows through without the berries being pressed.
- Peel sweet, juicy, tender pears smoothly, cut them in half, remove the core, weigh, and wash them.
- Clarify the sugar with a little water, add the lingonberry juice, pears, and cinnamon, and cook slowly, covered, until they can be easily pierced; cooking too long makes them unsightly and the juice too thick.
- Remove the pears with a slotted spoon and place them in jars.
- Once they have cooled, pour the juice over them and seal as usual.
