Red Pears in Sugar

6 servings

Red Pears in Sugar

Ingredients

Instructions

  1. Sort and wash ripe lingonberries, drain them on a sieve, quickly cook them until soft, and place them in a sterilized, pointed bag made of loose linen so that the juice flows through without the berries being pressed.
  2. Peel sweet, juicy, tender pears smoothly, cut them in half, remove the core, weigh, and wash them.
  3. Clarify the sugar with a little water, add the lingonberry juice, pears, and cinnamon, and cook slowly, covered, until they can be easily pierced; cooking too long makes them unsightly and the juice too thick.
  4. Remove the pears with a slotted spoon and place them in jars.
  5. Once they have cooled, pour the juice over them and seal as usual.
