Quince Marmalade

Ingredients
- 500 g quinces
- 250 g sugar
- cinnamon, pieces (a little)
- cloves, a few (a little)
Instructions
- Remove the bloom and stem from the softened quinces, wash them thoroughly, and cook them until soft with water, a few cloves, and a little cinnamon for about 1 hour.
- Mash them without the cooking water, stir through a sieve, and reduce with clarified sugar to make marmalade, which is great for filling baked goods.
