Lingonberries in Sugar

Ingredients
- 10 l lingonberries
- 1.5 kg sugar, crushed into small pieces
Instructions
- When sorting, discard unripe berries.
- To wash, place the berries in a container with water, stir vigorously with a hand sieve, transfer with the sieve to a wide container with water, then drain in a colander.
- Place some of the sugar in a glazed or Bunzlau pot, add some berries, and cook them uncovered until soft, stirring frequently and skimming off the foam.
- Pour into a ready container and repeat with the remaining ingredients.
- Once everything is cooked, stir well and let the container, covered with a cloth, sit until the next morning.
- Stir the berries again, fill into stoneware pots or glasses, smooth the top, cover with arrack or rum paper, and, if possible, tie with parchment paper.
