Melon in Sugar

Ingredients
- 1 kg melon (cantaloupe), ripe
- 0.75 kg sugar
- lemon zest (a little)
- cinnamon (a little)
- ginger, a few pieces (a little)
- cloves (as desired)
- good vinegar (a little)
Instructions
- Cantaloupe is best.
- Peel the fully ripe fruit, cut it in half, remove the pulp with a silver spoon, and cut it into finger-length, equally wide pieces.
- Place the pieces in good vinegar for 12 hours.
- Remove, then place in grated sugar for the same amount of time.
- Bring the resulting sugar syrup to a boil, skim it well, add lemon zest, ginger, and the melon, and cook until tender but not too soft.
- Reduce the juice significantly and fill both into a jar once cooled.
