Melon in Sugar

  1. Cantaloupe is best.
  2. Peel the fully ripe fruit, cut it in half, remove the pulp with a silver spoon, and cut it into finger-length, equally wide pieces.
  3. Place the pieces in good vinegar for 12 hours.
  4. Remove, then place in grated sugar for the same amount of time.
  5. Bring the resulting sugar syrup to a boil, skim it well, add lemon zest, ginger, and the melon, and cook until tender but not too soft.
  6. Reduce the juice significantly and fill both into a jar once cooled.
