Preserving and Drying Various Fruits
Raspberry Juice

Ingredients
- raspberries (as needed)
- water (a little)
- 450 g sugar (for 500 g juice)
Instructions
- Place the raspberries with a little water over low heat and, after they have cooked for a few minutes, pour them through a cloth.
- For every 500 grams of juice, add 375 to 500 grams of broken-up sugar and dissolve it in the juice.
- Place on the stove, as soon as it boils, skim well and let it simmer slowly on the side of the heat until it is clear.
- Let it cool in a porcelain bowl, pour into sulfured bottles, and seal as usual.
