Glass Cherries in Sugar

Ingredients
- 1 kg good, not too ripe glass cherries
- 1 kg sugar (same weight as the cherries)
Instructions
- Remove stems and pits from good, not too ripe glass cherries, weigh them, and take as much sugar as fruit.
- Clarify the sugar with water, add the cherries, and treat them further like plums in sugar.
- The flavor can be further enhanced by cracking some of the pits and cooking the kernels contained within, tied in a muslin cloth; however, they must not be placed in the jars.
