Peeled Damson Plums or Plums in Sugar

Ingredients
- 1 kg large blue plums or damson plums, peeled
- 0.75 kg sugar
- whole cinnamon (a little)
- cloves (a little)
Instructions
- Peel large blue plums or damson plums that are not yet too ripe, weigh them, and for every 1 kilogram of plums, allow 750 grams of sugar.
- Clarify and boil the sugar, add the plums, and let them boil a few times in it.
- On the second day, pour off the juice, boil it, and pour it over the plums again; repeat this on the third day, this time allowing the plums to boil once more.
- Optionally, on the second or third day, cook a little whole cinnamon and cloves tied in a muslin cloth with the plums, but remove them before sealing the jars.
