Peeled Plums or Damson Plums in Vinegar

  1. Peel the plums, boil good wine vinegar, and let it cool.
  2. Cover the bottom of the preserving jar with finely crushed sugar, place a layer of plums on top, then more sugar, and continue until the jar is full; occasionally add a small piece of whole cinnamon and a few cloves, and finally pour the cooled vinegar over it.
  3. Seal the jar and boil in a water bath for half an hour, then let it cool in the water.
  4. After a few days, drain the vinegar, boil it down to a thin syrup, and pour it cold over the damson plums.
  5. Repeat this boiling down as often as necessary until the vinegar over the damson plums no longer thins out.
