Preserving and Drying Various Fruits
Strawberry Juice

Ingredients
- 1 kg quite ripe strawberries
- 500 g sugar
Instructions
- Place the sorted and washed strawberries on a clean colander to drain.
- Reduce the sugar until quite thick, add the strawberries, and stir gently with a silver spoon without letting them boil.
- Pour onto a linen cloth, previously scalded in boiling water and stretched over a porcelain bowl, and let the juice drain through without pressing or mashing the strawberries.
- Once cooled, pour the juice off the sediment and fill into small bottles.
- The leftover fruit pulp makes a delicious compote when cooled.
