Strawberry Juice

  1. Place the sorted and washed strawberries on a clean colander to drain.
  2. Reduce the sugar until quite thick, add the strawberries, and stir gently with a silver spoon without letting them boil.
  3. Pour onto a linen cloth, previously scalded in boiling water and stretched over a porcelain bowl, and let the juice drain through without pressing or mashing the strawberries.
  4. Once cooled, pour the juice off the sediment and fill into small bottles.
  5. The leftover fruit pulp makes a delicious compote when cooled.
