  1. Peel good, juicy, completely ripe table pears smoothly, cut them lengthwise, remove the core, and rinse.
  2. Place the pears with the ginger cut into small pieces in clarified sugar and cook until soft, until they can be pierced and have become clear.
  3. Place in a glass with the juice, reduce the juice until thick after a few days, pour cold over the fruit, and seal the jars as instructed.
