Barberries in Sugar

  1. The berries ripen at the end of September or beginning of October.
  2. Place the fruits in a container, clarify the sugar and pour it over them, not too hot, so that the berries do not detach from their stems.
  3. After 48 hours, reduce the juice to a syrup and, once cooled, fill into glasses with the fruits.
  4. This preserve is primarily used to beautifully decorate puddings and cakes.
