Preserving and Drying Various Fruits
Barberries in Sugar

Ingredients
- 500 g selected barberries with stems
- 500 g sugar
Instructions
- The berries ripen at the end of September or beginning of October.
- Place the fruits in a container, clarify the sugar and pour it over them, not too hot, so that the berries do not detach from their stems.
- After 48 hours, reduce the juice to a syrup and, once cooled, fill into glasses with the fruits.
- This preserve is primarily used to beautifully decorate puddings and cakes.
