Apricots in Sugar

  1. Peel the apricots or wipe them with a soft cloth and pit them.
  2. Place in a porcelain dish with the open side facing up, and sprinkle grated sugar in layers between them.
  3. The next day, gently heat until warm, but not too soft, then drain on a colander and place in a canning jar with the peeled apricot kernels.
  4. Boil down the juice until it thickens, and pour cold over the fruit.
  5. After 8 days, re-boil the juice and pour it cold over the fruit again; repeat this once more for safety.
