Apricots in Sugar

Ingredients
- 500 g Apricots
- 500 g fine sugar
Instructions
- Peel the apricots or wipe them with a soft cloth and pit them.
- Place in a porcelain dish with the open side facing up, and sprinkle grated sugar in layers between them.
- The next day, gently heat until warm, but not too soft, then drain on a colander and place in a canning jar with the peeled apricot kernels.
- Boil down the juice until it thickens, and pour cold over the fruit.
- After 8 days, re-boil the juice and pour it cold over the fruit again; repeat this once more for safety.
