Apricots in Vinegar

Ingredients
- 2.5 kg ripe, firm apricots
- 1 kg sugar
- 0.25 l wine vinegar
- 4 g cinnamon, cut into pieces
- 3 g cloves
- 2 pcs ginger, 2 finger-length pieces
Instructions
- Skim the vinegar and sugar, remove from heat, and let the peeled, pitted apricots heat through completely in it.
- Drain on a colander, then place in a preserving jar with the peeled apricot kernels, cinnamon, and cloves.
- Boil down the vinegar with sugar and ginger until thick, then pour cold over the apricots.
- After a few days, boil down the liquid again, which must be repeated once more after a while.
