Apricots in Vinegar

  1. Skim the vinegar and sugar, remove from heat, and let the peeled, pitted apricots heat through completely in it.
  2. Drain on a colander, then place in a preserving jar with the peeled apricot kernels, cinnamon, and cloves.
  3. Boil down the vinegar with sugar and ginger until thick, then pour cold over the apricots.
  4. After a few days, boil down the liquid again, which must be repeated once more after a while.
