Pineapple in Sugar

Ingredients
- 1 pcs pineapple, peeled, crown removed
- grated refined sugar (as needed)
- 1 glass Madeira
Instructions
- Slice the peeled, crownless pineapple into very thin slices and layer them with grated refined sugar in a covered porcelain dish.
- After 3 days, pour off the juice, cook until thick, stir in a glass of Madeira, pour boiling hot over the pineapple, and once cooled, fill into a jar, sealing it as directed.
