Sprout Kale

Ingredients
- 1 kg sprout kale
- 1 cup water
- 0.5 glass vinegar
- 2 pcs eggs
- 1 tsp flour
- butter (a little)
- salt (a little)
- nutmeg (a little)
Instructions
- 1 kg of sprout kale for 4 people.
- This name refers to the tender shoots that brown or kale stalks remaining in the ground produce in spring.
- Prepare the kale like Brussels sprouts after trimming the leaf stems and thoroughly washing the leaves.
- Alternatively, boil the kale in salted water until soft, and after draining, pour the following egg sauce over it: mix 1 large cup of water with ½ wine glass of vinegar, 2 eggs, 1 teaspoon of flour, a walnut-sized piece of butter, a little salt, and nutmeg.
- Bring the mixture almost to a boil over low heat, stirring and whisking constantly, then quickly remove from the heat and stir in another piece of butter to prevent the sauce from curdling.
- The kale is chopped like kale; optionally, it can also be cooked whole like kale.
