  1. 1 kg of sprout kale for 4 people.
  2. This name refers to the tender shoots that brown or kale stalks remaining in the ground produce in spring.
  3. Prepare the kale like Brussels sprouts after trimming the leaf stems and thoroughly washing the leaves.
  4. Alternatively, boil the kale in salted water until soft, and after draining, pour the following egg sauce over it: mix 1 large cup of water with ½ wine glass of vinegar, 2 eggs, 1 teaspoon of flour, a walnut-sized piece of butter, a little salt, and nutmeg.
  5. Bring the mixture almost to a boil over low heat, stirring and whisking constantly, then quickly remove from the heat and stir in another piece of butter to prevent the sauce from curdling.
  6. The kale is chopped like kale; optionally, it can also be cooked whole like kale.
