Spinach

Ingredients
- spinach (as needed)
- 2 tablespoons butter
- 1 tablespoons flour
- water or beef broth (a little)
- nutmeg (a little)
- onion (a little)
- chives (a little)
- white bread slices (a little)
- eggs (a little)
Instructions
- Wash the well-sorted spinach in plenty of water until no sand remains.
- Blanch it uncovered in vigorously boiling water for 2-3 minutes, then transfer to a sieve.
- Rinse with a little cold water, press out well with a slotted spoon, and chop finely.
- Melt 2 tablespoons butter until yellow, stir in 1 tablespoon fine flour, then add the spinach.
- If it's too thick, add a little water or beef broth, or even leftover good gravy, and toss the spinach in it.
- Season with nutmeg as desired, add an onion while blanching, or stir in some finely chopped chives.
- For garnish, arrange fried white bread slices around the edge of the serving dish, top with fried eggs, or garnish the dish with quartered hard-boiled eggs.
