  1. Wash the well-sorted spinach in plenty of water until no sand remains.
  2. Blanch it uncovered in vigorously boiling water for 2-3 minutes, then transfer to a sieve.
  3. Rinse with a little cold water, press out well with a slotted spoon, and chop finely.
  4. Melt 2 tablespoons butter until yellow, stir in 1 tablespoon fine flour, then add the spinach.
  5. If it's too thick, add a little water or beef broth, or even leftover good gravy, and toss the spinach in it.
  6. Season with nutmeg as desired, add an onion while blanching, or stir in some finely chopped chives.
  7. For garnish, arrange fried white bread slices around the edge of the serving dish, top with fried eggs, or garnish the dish with quartered hard-boiled eggs.
