Pea Pod Puree

Ingredients
- Peas (as needed)
- Water (a little)
- Salt (a little)
- Butter (a little)
- Parsley (a little)
Instructions
- If the peas become thick and somewhat hard in late summer, it is advisable to prepare them as a puree.
- Wash the shelled peas thoroughly and start them cold in soft water, without salting.
- When they are just tender, before they overcook, drain the water, press the peas through a fine sieve, and bring the puree to a boil with salt, butter, and very finely chopped parsley.
