Pea Pod Puree

Ingredients

Instructions

  1. If the peas become thick and somewhat hard in late summer, it is advisable to prepare them as a puree.
  2. Wash the shelled peas thoroughly and start them cold in soft water, without salting.
  3. When they are just tender, before they overcook, drain the water, press the peas through a fine sieve, and bring the puree to a boil with salt, butter, and very finely chopped parsley.
