  1. For 4 people, use 250 g of cooked ham, 1½ kg of potatoes, 2 large onions, and 125 g of butter; leftover cooked ham that is no longer easy to slice is also well suited.
  2. Finely chop the ham.
  3. Cook the potatoes in their skin, peel, and keep hot.
  4. Place a layer of potato slices in a thickly buttered casserole dish, top with small pieces of butter, a layer of ham, onion slices fried in butter, and again potatoes, continue in this way until the last layer is topped with butter.
  5. Place the dish in a hot oven and, as soon as the potatoes are very hot, pour the following mixture over them and sprinkle with a little crushed rusk: whisk 3 well-beaten eggs with 2 cups of milk, a pinch of salt, and a little nutmeg.
  6. Bake the dish in the oven for about ¾ hour, without skimping on the butter.
  7. Finely diced, slowly rendered bacon can also be used well.
