Boiled Potatoes in Their Skins

  1. Choose potatoes of the same size, preferably medium-sized.
  2. Wash them, cover them with just enough cold water, and quickly bring to a boil.
  3. Then remove from heat or reduce the heat and let them continue to cook slowly until tender and cracked open.
  4. Let them steam dry well, like peeled potatoes, and serve immediately.
  5. In spring, when the skin becomes thicker, soak the potatoes a little before cooking and scrub them with a brush.
  6. To encourage old potatoes to crack, you can peel a straw's width around each potato.
