Lentils in Meat Broth

  1. Sort and wash ½ kg of lentils thoroughly, then soak them in cold, soft water until they swell.
  2. Put them on the stove in the same water and cook until fairly tender.
  3. Drain all the water and add meat broth, chopped leeks, and celery.
  4. Cook the lentils until they are completely tender, and thicken with flour browned in plenty of fat.
