  1. Take a generous deep plate full of grated potatoes, cooked with salt and peeled the day before.
  2. Add 4 whole eggs, 4 tablespoons of cream or milk, the same amount of melted butter, and 1 teaspoon of salt.
  3. Pour the potatoes onto a noodle board, form a well in the center, add some flour, along with the eggs, cream, butter, and salt, and work into a dough, continually sprinkling in more flour until the dough can be stretched and shows small holes when cut through.
  4. Form small pieces of dough into long rolls like potatoes, cook for 8-10 minutes in boiling, salted water, place on a colander, and as soon as drained, while still very hot, place into a hot pan with butter, where they are fried until golden brown on all sides.
