Mashed Potatoes or Potato Purée

Ingredients
- 1 kg potatoes
- water (a little)
- salt (a little)
- milk (a little)
- butter (a little)
- onions (a little)
- rusks (a little)
- bacon (a little)
Instructions
- Peel 1 kg of potatoes and cook them thoroughly with water and salt, drain completely, mash finely, and pass through a colander.
- Cook into a mash with milk or half milk, half water, and butter.
- The mash should not be too stiff; arrange smoothly and top with onions browned in butter, finely crushed rusks browned in butter, brown butter, or finely diced, yellow-fried bacon.
- You can also press the cooked potatoes through a grater and then process as described – this makes the purée especially fluffy.
