Herring Potatoes

Ingredients
- 1 kg potatoes
- 2 pieces herring
- 1 piece onion
- 2 tbsp butter
- 1 tbsp flour
- 1 cup milk
- pepper (a little)
- vinegar (a little)
- 1 piece bay leaf
Instructions
- Boil 1 kg potatoes with their skins until tender, peel them, and slice them, keeping them as hot as possible.
- Melt the butter in a pot, then sauté the onion and flour in it until light yellow.
- Add the finely chopped herring, milk, and a little ground pepper.
- Add the potatoes and cook thoroughly.
- If desired, also add a little vinegar and 1 bay leaf.
- This dish should be quite juicy and not stiff, as is recommended for all potato dishes.
