Green Peas or Pea Pods
4 servings
Ingredients
- Peas (as needed)
- Water (a little)
- Butter (a little)
- Salt (a little)
- Sugar (a little)
- 1 tbsp Flour
- 1 tbsp Butter
- Parsley (a little)
Instructions
- Boil water with plenty of butter, gradually add the shelled peas, allowing the broth to come back to a boil each time, and cook the peas in a small amount of broth for about 1 hour.
- Shortly before serving, add a little salt and a pinch of sugar, thicken the broth with a roux, and toss with finely chopped parsley.
- Instead of the roux, as soon as the peas boil, you can also add a small ball kneaded from 1 tablespoon of flour and 1 tablespoon of butter, which will gradually dissolve and slightly thicken the broth.
Modernized from a treasured 19th-century German cookbook.
