Stuffed Cucumbers

Ingredients
- cucumbers (as needed)
- salted water (a little)
- vinegar (a little)
- veal farce (a little)
- beef broth (a little)
- butter (a little)
- flour (a little)
Instructions
- Choose large cucumbers, peel them, halve them lengthwise, and remove the seeds.
- Briefly bring to a boil in salted water with vinegar, then place in cold water, pat dry with a cloth, and fill with veal farce.
- Reassemble 2 cucumber halves, wrap with thread, and cook until soft in beef broth and butter in a ceramic dish for about 1 hour.
- Before serving, add a splash of vinegar and thicken the sauce with a little flour mixed with water.
