Mushrooms as a Vegetable Dish

Ingredients
- Mushrooms (as needed)
- Meat broth (a little)
- Butter (a little)
- Nutmeg (a little)
- 1 teaspoon Potato flour
- Lemon juice (a little)
- Salt (a little)
- Egg yolks (a little)
Instructions
- Peel the mushrooms, cut off the gills under the cap, and rinse the mushrooms.
- Place them in an earthenware pot with a little meat broth, butter, and nutmeg, and cook slowly, tightly covered, for ½ hour.
- Finally, add 1 teaspoon of potato flour stirred clear with a little water, or a little crushed rusk, season with a little lemon juice and salt, and cook until the broth thickens; it can also be mixed with a few egg yolks.
