Fried Potatoes
4 servings
Ingredients
- potatoes (as needed)
- butter, cooking fat or bacon (a little)
- onion (a little)
- salt (a little)
Instructions
- Fried potatoes turn out best when made from freshly boiled jacket potatoes, kept hot until frying; however, leftover boiled or jacket potatoes can also be used.
- Slice the potatoes and fry them in a shallow pan with pure butter, cooking fat, or bacon.
- If desired, fry sliced onions briefly before adding the potatoes.
- Sprinkle the potatoes with salt and roast them until light brown, shaking and stirring carefully to prevent burning.
Modernized from a treasured 19th-century German cookbook.
