Artichokes

Ingredients
- 11 pcs Artichokes
- Lemon juice (a little)
- Salted water (a little)
- Butter, oil, or hollandaise sauce (a little)
Instructions
- Cut off the stems of the artichokes and remove enough of the underside to expose the white flesh; remove the lower, tough leaves and cut off the prickly tips of the remaining leaves with scissors.
- After washing, place the artichokes in plenty of boiling water lightly acidified with lemon juice to keep them bright.
- As soon as the inner threads can be easily pulled out, remove the artichokes and cool them in cold water.
- Remove the tough threads and small leaves in the center, rinse again, and finish cooking them in salted water, which takes about 2 hours from the first cooking.
- When serving, drain on a cloth, place on a flat dish, and pour hot butter, hot oil, or hollandaise sauce over them.
- For 4 people, plan for about 10-12 artichokes.
