  1. Cut off the stems of the artichokes and remove enough of the underside to expose the white flesh; remove the lower, tough leaves and cut off the prickly tips of the remaining leaves with scissors.
  2. After washing, place the artichokes in plenty of boiling water lightly acidified with lemon juice to keep them bright.
  3. As soon as the inner threads can be easily pulled out, remove the artichokes and cool them in cold water.
  4. Remove the tough threads and small leaves in the center, rinse again, and finish cooking them in salted water, which takes about 2 hours from the first cooking.
  5. When serving, drain on a cloth, place on a flat dish, and pour hot butter, hot oil, or hollandaise sauce over them.
  6. For 4 people, plan for about 10-12 artichokes.
