Roasted Wild Goose

- 1 piece wild goose
- salt (a little)
- pepper (crushed) (a little)
- seasoning (a little)
Instructions
- Serves 6-8.
- The wild goose should be as young as possible and hung in a cool place for several days.
- It is prepared like a regular goose, but after evisceration, it is soaked in water for a bit.
- Rub it inside and out with salt, crushed pepper, and seasoning, then roast as you would a regular goose.
