Soup Meat with Apples

  1. Melt 1 tablespoon of butter in a pot.
  2. Peel sour apples, quarter them, remove the core, and braise them in the butter until half-cooked.
  3. Then add currants, a little wine, bouillon or water (but not too much), the meat cut into pieces, and a little salt.
  4. Let everything simmer together, occasionally swirling the pot.
  5. The broth should be rich and beautifully creamy.
  6. For one heaped plate of sliced meat, plan for 4 to 6 apples, 4 tablespoons of currants, and 1 glass of wine.
