Pork Chops or Cutlets

Ingredients
- 0.62 kg pork loin
- pepper (a little)
- salt (a little)
- egg (a little)
- breadcrumbs (a little)
- butter (a little)
- olive oil (a little)
Instructions
- For 4 people, ½ to ¾ kg of pork loin.
- Cut finger-thick slices from the chop piece, chop off the vertebral bone and a piece of the rib bone short, trim the fat as desired, flatten the slices slightly, sprinkle with a little pepper and salt, bread in egg and breadcrumbs, and fry light brown on both sides in rendered butter in an open pan.
- Alternatively, do not bread, but after salting and peppering, brush with melted butter or olive oil and grill brown on both sides.
- Serve as a side dish to vegetables or as a standalone dish with mashed potatoes or fried potatoes and salad.
