  1. A small tenderloin is enough for 4 people, a larger one for 6.
  2. Skin the tenderloin and finely lard it.
  3. Place it in a small pan with boiling butter.
  4. Periodically add a few spoons of boiling water and roast the tenderloin, basting diligently, until cooked through and nicely light brown.
  5. Finally, add a little sour cream to the sauce.
