Ham in Madeira

Ingredients
- 1 piece Ham, cooked
- Jus (a little)
- 1.5 tablespoons Flour
- Butter (a little)
- Salt (a little)
- Lemon slices (a little)
- Vinegar (a little)
- Morels, truffles, or mushrooms (a little)
- 1 pinch Cayenne pepper
- 0.5 bottle Madeira
- Rice (a little)
Instructions
- Cook the ham until tender, skin it, trim off the fat except for a narrow strip, slice it thinly, and arrange it overlapping in a deep dish with the fatty side facing up.
- Pour the following sauce over it, ensuring it is quite hot: from a good jus, brown 1 to 2 tablespoons of flour in butter, deglaze with the jus, season with salt, lemon slices, and a little vinegar, and let it simmer.
- Then add prepared morels, or truffles or mushrooms, a pinch of cayenne pepper, and ½ bottle of Madeira.
- Arrange the ham with this sauce, surround it with a two-finger-width border of rice, and serve as hot as possible.
