Braised Beef in Sour Milk

Ingredients
- Beef, piece as for Sauerbraten (pcs)
- Salt (a little)
- Allspice, crushed (a little)
- Butter (a little)
- Bacon or kidney fat (a little)
- 4 cup Sour milk, thick
Instructions
- Take a piece of meat suitable for Sauerbraten, pound it quite tender as described before, and rub it with salt and crushed allspice.
- Then, brown butter and bacon or kidney fat until golden, place the meat in it, and let it brown lightly on all sides, moving it back and forth frequently to prevent burning.
- Once the meat has a nice color, pour in 1 cup of thick sour milk and repeat this each time it has reduced a bit, for a total of 3 to 4 times.
- Then, let the roast simmer slowly, tightly covered, until tender.
