Roe Deer or Venison Loin on a Spit

Ingredients
- 1 pcs roe deer or venison loin
- 300 g butter
- 125 g flour
- 0.25 l milk
- 0.5 l sour cream
Instructions
- Clean and skin the loin, lard it according to instructions, attach it to a spit, pour boiling water over it, and place over a bright charcoal fire.
- Brown 300 g butter, sauté 125 g flour in it, and mix with ¼ l milk.
- Baste the roast almost continuously with this sauce.
- Half an hour before it's done, bring ½ l sour cream to a boil with the sauce.
- Roasting time is 1½ – 2 hours.
