Steamed Roe Deer or Red Deer Leg

Ingredients
- 1 pcs Roe deer or red deer leg
- Vinegar (a little)
- Onions (a little)
- Root vegetables (a little)
- Lemon slices (a little)
- Parsley (a little)
- Tarragon (a little)
- Thyme (a little)
- Pepper (a little)
- Juniper berries (a little)
- Bouillon (as needed)
Instructions
- Marinate the leg in vinegar with finely chopped onions, root vegetables, lemon slices, parsley, tarragon, thyme, pepper, and juniper berries.
- Let it rest in this marinade for 8 days, turning daily.
- Afterward, remove the meat, strain the marinade through a sieve, and use a portion of it with bones and meat trimmings from the deer or with bouillon to cook a brown sauce in which the meat is braised until tender.
