Roasted Turkey

Ingredients
- 1 pcs Turkey
- Stuffing (a little)
- Salt (a little)
- Bacon slices (a little)
- Butter (a little)
- Water (a little)
- 1 tsp Potato flour
- Lemon slices (for garnish) (a little)
Instructions
- The turkey is slaughtered two days in advance, trussed, larded, and filled with stuffing.
- Sprinkle with salt, place thin bacon slices on the breast, and cover with paper.
- Place in a roasting pan with plenty of butter and water in the oven, and if young, roast slowly for 2.5 hours, adding some boiling water as needed to prevent the sauce from browning.
- Baste diligently as with roasted hare.
- Remove the paper in time for the breast to turn golden.
- Before serving, stir 1 teaspoon of potato flour into the sauce and garnish the platter with delicate lemon slices.
