Kidney Slices

Ingredients
- 1 pcs Fried kidney
- Roasted veal (a little)
- Parsley (a little)
- 2 pcs Eggs
- Salt (a little)
- Nutmeg (a little)
- White bread slices (a little)
- Milk (a little)
- Grated breadcrumbs or rusk (a little)
- Butter (a little)
Instructions
- Finely chop the fried kidney with its fat, some roasted veal, and parsley, and mix with 2 eggs, a little salt, and nutmeg.
- Soften slices of white bread in milk, spread them thickly with this mixture, smooth it out, indent crosswise, and sprinkle with finely grated breadcrumbs or rusk.
- Heat butter, fry the bottom side of the slices until golden, then flip until the kidney side is also golden.
- Serve as a side dish to fine vegetables.
