Roasted Rabbit

- 1 pcs Rabbit
- Vinegar or buttermilk (as needed)
- Grated breadcrumbs (a little)
- Butter (a little)
- Lemon juice (a little)
Instructions
- One rabbit serves 2-4 people.
- Rabbit meat tastes similar to hare but is more tender and juicier, thus requiring a shorter cooking time.
- Wild rabbits taste better than farmed ones.
- It is recommended to marinate the meat for 2 days in vinegar or 4-5 days in buttermilk (changing it once or twice) for a more robust flavor.
- Prepare the rabbit and roast it like a hare. 0.5 hour before serving, sprinkle generously with grated breadcrumbs, drizzle with butter, and roast until very crisp and golden.
- Drizzle with lemon juice when serving.
