  1. One rabbit serves 2-4 people.
  2. Rabbit meat tastes similar to hare but is more tender and juicier, thus requiring a shorter cooking time.
  3. Wild rabbits taste better than farmed ones.
  4. It is recommended to marinate the meat for 2 days in vinegar or 4-5 days in buttermilk (changing it once or twice) for a more robust flavor.
  5. Prepare the rabbit and roast it like a hare. 0.5 hour before serving, sprinkle generously with grated breadcrumbs, drizzle with butter, and roast until very crisp and golden.
  6. Drizzle with lemon juice when serving.
