Baked Calves' Feet à la Geistensterz

Ingredients
- cooked calves' feet (a little)
- egg (a little)
- grated white bread (a little)
- butter (a little)
- flour (a little)
- onions (a little)
- vinegar (a little)
- red wine (a little)
- mustard (a little)
- pickled cucumbers or capers (a little)
Instructions
- Cook the calves' feet as described previously, remove them from the bones, coat them in egg and grated white bread, and fry them until golden in hot butter.
- Brown flour and butter with onions, then add some of the broth in which the feet were cooked, along with a little vinegar, red wine, mustard, and sliced pickled cucumbers or capers, and cook together until the cucumbers are soft.
- When serving, add some sauce under the calves' feet and serve the rest on the side.
