Hamburg Smoked Beef
4 servings
Ingredients
- 1.25 kg smoked beef
- water (as needed)
Instructions
- 1 to 1½ kg smoked beef.
- Before cooking, wash the meat with lukewarm water and let it soak overnight; then place it in cold water and let it cook slowly for 3 to 4 hours until tender.
- Once soft, let it steep in the broth for another ½ hour, which makes it juicier.
- If you wish to serve it cold, let it cool in the broth and, if not used immediately, store it in the broth in a cool place; if you boil the broth from time to time and let it cool again before pouring it over the meat, it will keep for quite a long time.
- Serve with horseradish sauce, especially on the side, or serve the meat warm or cold as a side dish with vegetables or as a cold cut.
Modernized from a treasured 19th-century German cookbook.
