Meatloaf, Klopsbraten, or False Hare

Ingredients
- 1 kg Beef, lean
- 0.5 kg Pork, marbled
- 3 pcs Eggs
- 125 g Butter, melted
- 1 cup Grated breadcrumbs
- Salt (a little)
- 1 pcs Onion, grated
- Nutmeg (a little)
- 2 cup Sour cream
Instructions
- For 8 to 10 people, take 1 kg lean beef and ½ kg marbled pork, chop both very finely or pass them through a meat grinder, and mix with 3 beaten eggs, 125 g melted butter, 1 small cup of grated breadcrumbs, the necessary salt, 1 grated onion, and a little nutmeg.
- Form the well-mixed mass into a saddle of venison shape, lard it in 3 to 5 rows, and score the spaces in between with the back of a knife.
- Then, place the roast in browned butter in a roasting pan, roast it in the oven for 1 hour, basting frequently.
- Afterward, sprinkle it with grated breadcrumbs to ensure a beautiful brown color, gradually add 2 cups of sour cream, then roast for another ½ hour, and serve.
