Ordinary Veal Fricassee

Ingredients
- 1 pcs onion, finely chopped
- butter (plenty)
- veal, cut into pieces (pcs)
- 1 tbsp flour
- water, boiling (as needed)
- salt (a little)
- pepper, whole (a little)
- allspice (a little)
- 1 pcs bay leaf
- lemon slices (some)
- 1.5 pcs egg yolks
Instructions
- A finely chopped onion is browned in plenty of butter until yellow.
- The meat, cut into small pieces, is then steamed in it for a while with 1 tablespoon of flour, without browning, and then covered halfway with boiling water.
- After adding salt, some whole pepper, allspice, 1 bay leaf, and a few lemon slices, the meat is cooked until tender but not too soft.
- Thicken the sauce with light roux and bind it with 1 to 2 egg yolks.
