  1. Place the ham in water overnight.
  2. The next morning, wash it in hot water with a handful of bran, rinse it, and place it covered with boiling water.
  3. The ham must be brought to a boil quickly, then cooked slowly and continuously for 3 to 5 hours, and allowed to rest in the broth, tightly covered, for ½ hour.
  4. After about 1 hour of cooking time, add 1 glass of grain brandy, which makes it particularly tender and soft.
  5. To check if the ham is cooked, prick it with a fork or larding needle; if it pulls out easily without the ham lifting, it is done.
