Frikandellen from Leftover Meat
4 servings
Ingredients
- leftover meat, cooked or roasted (pieces)
- onion or parsley (a little)
- eggs (a few)
- salt (a little)
- pepper, ground (a little)
- grated white bread (a little)
- gravy or sour cream (or milk) (a little)
- white bread for sprinkling (a little)
- butter (a little)
- ham, cooked (to taste)
- cold potatoes, grated (optional)
Instructions
- Take leftover cooked or roasted meat, finely chop it with an onion or parsley, and mix in a few eggs, salt, a little ground pepper, grated white bread, and gravy or sour cream (or a little milk if those are unavailable).
- Form egg-sized dumplings, flatten them slightly, sprinkle with finely grated white bread, and fry them in butter until golden.
- If you have cooked ham on hand, you can chop some with the meat.
- Instead of white bread, a few grated cold potatoes can also be used quite well.
Modernized from a treasured 19th-century German cookbook.
