Escalopes

Ingredients
- 1 kg beef, like beefsteaks, finely chopped
- 175 g kidney fat, finely chopped
- 20 g salt
- a pinch of pepper (a pinch)
- butter (a little)
Instructions
- Take beefsteak-quality meat and chop it very finely, removing all sinews.
- For 1 kg of meat, use 150 to 200 g of very finely chopped kidney fat, mix with 20 g of salt and a pinch of pepper, divide the mixture into equal portions, shape them with a knife into round or elongated flat forms like beefsteaks, and fry the meat in yellow butter for about 10 to 15 minutes on both sides, not too brown, basting frequently.
- Serve the escalopes with mustard sauce, if desired.
