Roasted Duck
4 servings
Ingredients
- 1 pcs duck
- salt (a little)
- butter (plenty of)
- tart apples (as needed)
- currants (as needed)
- duck liver (finely chopped) (as needed)
- 2 pcs eggs
- 150 g white bread
- nutmeg (a little)
Instructions
- Fill the duck as desired or leave it unfilled.
- Rub with a little salt, place in plenty of butter on the stovetop or in the oven, and roast slowly for 1½ hours.
- If roasting on the stovetop, cover the pot tightly; in either case, baste frequently during roasting.
- For stuffing, either use tart, quartered apples and currants, or mix finely chopped liver with butter beaten until thick like an egg, 2 eggs, 150 g of soaked and well-squeezed white bread, nutmeg, and salt.
